Baked Parmesan Chicken Tenders
Ingredients:
1 cup buttermilk
1/2 cup of grated parmesan cheese
1/2 cup of cornflake crumbs (can sub panko bread crumbs)
1 pound of tender chicken (about 10)
3 tablespoons of melted butter
Salt and pepper
Instructions:
Preheat oven to 425 degrees. Spray a bake sheet with nonstick spray.
Place buttermilk in a bowl, mix parmesan and cornflake crumbs and place in another bowl. Place the chicken tenders in buttermilk and let soak for about 15 minutes. Then dip each tender into the cheese crumb mixture to cover completely and place on the baking sheet. Pour the melted butter over the chicken tenders. Sprinkle lightly with salt and pepper.
Bake in the oven for 12 minutes or until the tenders are crispy, golden brown, and cooked.
